A little change of scenery...we're still in the States visiting family so August's cake was made and photographed at my parents house. It's my mom's banana cake recipe with cream cheese frosting. Yum. I'll post the recipe in the comments section later!
Also I think I've found my niche- mini cakes. You can't tell from the picture very well but this cake is mini- made from two six inch rounds. Definitely my new favorite thing- cake in miniature form!

Banana Cake:
ReplyDelete3/4 C. butter at room temp
2 1/8 C. sugar
3 large eggs
2 tsp. vanilla
3 C. flour
1.5 tsp. baking soda
1/4 tsp. kosher salt
1.5 C. buttermilk- shaken
2 tsp. lemon juice
2 C. mashed, ripe bananas
Preheat oven to 275 (fahrenheit)
Grease and flour two nine inch cake pans. In a small bowl mash bananas with the lemon juice and set aside. In medium bowl mix flour, baking soda and salt . In a large bowl cream butter and sugar until light and fluffy. Beat in eggs one at a time and then add vanilla. Beat in the flour mixture to the dry mixture alternately with the buttermilk. Stir in the bananas. Pour batter into prepared pans and bake for 40-50 minutes. Remove from oven and place directly into freezer for 45 minutes.
Frosting:
Combine creme cheese and powdered sugar to taste.
That sounds amazing! I'm not typically a cake person but I love baking banana breads, so I think I'll try this the next time I want to bake something . Do you know if a diary substitute like almond milk would work instead of the buttermilk?
